CHICAGO – Despite its location in Chicago’s Avondale neighborhood, the TriBecca sandwich shop represents the heart of the state with its unique offerings and ingredients.

“I think we need to bring more flavors from central Illinois to Chicago,” Grothe said.

Grothe grew up in Galesburg, which is located almost 200 miles southwest of Windy City. There she grew up eating bulk meat sandwiches from the fast-food regional chain Maid-Rite, which inspired her to create “MaidWrong”, a gourmet version of downtown Illinois with agrodolce onions.

Another adjoining sandwich in downtown Illinois at TriBecca’s is Horseshoe: two cheesy burgers on Texas toast, topped with sliced ​​potatoes and topped with jack pepper sauce. The sandwich comes from Springfield, Ill.

“People in Chicago are generally surprised to see the horseshoe,” Grothe said. “It’s probably one of the most unique sandwiches you can get.”

Grothe said she did not want her clients’ ideas to be limited to Chicago-type hot dogs and Italian beef sandwiches. He wants to give Petalo a chance.

“They’re a little scared, but once they try it they realize how delicious it is and what a wonderful sandwich it can be,” Grothe said.
